Baby Carrots with Lemon and Parsley
1 lb baby carrots
1 1/2 teaspoons sugar
3 tablespoons butter
1 tablespoon lemon juice
1 1/2 tablespoons chopped parsley
salt
pepper
4-6 servings
Put carrots in pan and cover with water. Add the sugar and cook just til soft.
Drain & return to the pan. Stir in butter, lemon juice and parsley.
Salt and pepper to taste.
