Mint Couscous Pilaf

2 cups chicken or vegetable stock
1 1/2 cups couscous
1/2 cup chopped celery
1/4 cup chopped scallions
1/4 cup toasted pine nuts
3 Tbsp. chopped mint
2 Tbsp. olive oil
salt and pepper to taste

In a small saucepan, bring stock to a boil. Remove from heat, stir in couscous, cover and let sit 10 minutes. Fluff with a fork and put in a medium bowl. Add celery, scallions, pine nuts, mint and oil. Toss well. Season with salt and pepper.
