Pesto

Low Carb, Medium Fat
Yield: 1/4-1/2 cups

Pesto is always good to have in the house, whether to eat as is or to use in cooking. Try it spread on celery or sliced cucumbers for a real low-carb, low-fat snack. And see the Poultry section for delicious Chicken Breasts with Pesto Stuffing in Wine (p. 242).

1/4 bunch fresh basil
(cannot be substituted with dried)
1/2 cup pine nuts
2 cloves garlic, peeled
2 tablespoons olive oil
1-2 tablespoons water
salt and pepper to
taste

 


Using a food processor, chop the basil, pine nuts and garlic.
Add oil and mix until combined.
While mixing, add water to desired consistency.
Season with salt and pepper.
