Sage Scalloped Potatoes

3 lb. potatoes, scrubbed and thinly sliced
salt and pepper to taste
9 Tbsp. all-purpose flour
6 Tbsp. butter, diced
1 Tbsp. chopped sage
1 quart milk

Preheat oven to 425 degrees F. Oil a 9" x 13" pan. Layer 1/3 of potatoes in pan. Sprinkle with salt and pepper, 3 Tbsp. flour, 2 Tbsp. butter and 1 tsp. sage. Repeat layers two more times. Slowly add milk. Bake 5 to 10 minutes, or just until milk comes to a boil. Reduce heat to 375 degrees F and bake for 45 to 60 minutes, or until well browned and tender.
