Thyme Marinated Mushrooms

Juice of 1/2 lemon
1 lb. mushrooms, sliced
3/4 cup cider vinegar
1/2 cup olive oil
1 clove garlic, minced
1 1/2 tsp. chopped thyme
1 tsp. salt 
1/4 tsp. pepper
1 bay leaf
1/4 cup chopped parsley

Combine lemon juice and 3 cups water in a medium saucepan. Bring to a boil. Add mushrooms, reduce heat to low and simmer for 3 minutes, or until tender. Drain well and place in a non-reactive bowl. Combine vinegar, oil, garlic, thyme, salt, pepper and bay leaf in a small saucepan. Bring to a boil. Pour over mushrooms and chill well. Discard bay leaf, and garnish with parsley.
